Ingredients
- Your favourite type of bread
- Two medium carrots
- One ripe avocado
- Your choice of vegan spread (or vegan mayonnaise)
- One tablespoon of soy sauce
- One tablespoon of olive oil
- One tablespoon of liquid smoke
- One sheet of nori seaweed
- One lemon
- Garden rocket (as desired)

- Cheesecloth (for wrapping the seaweed)
- Vegetable peeler
Procedure
1. Prepare the ‘salmon’ carrots
Use the vegetable peeler to slice the carrots without peeling them. Cut the nori sheet into smaller pieces, lay out the cheesecloth, and place the seaweed in the middle. Wrap it up to form a pouch. Boil the carrots in a pot along with the seaweed pouch for about 10 minutes until soft.
Once cooked, drain the carrots and pat dry with a kitchen towel to remove any excess moisture. Place the carrots in a bowl, add soy sauce, olive oil, and liquid smoke. Stir well, cover, and let marinate for at least 30 minutes.
2. Prepare the avocado
Dice the avocado and season with salt, olive oil, and lemon juice. Mash some of the cubes with a fork to create a creamy texture.
3. Assemble the sandwich
