With the whole specialties Luzi “WITHOUT WHEAT” is born the alternative to the consumption of traditional durum wheat pasta. An unpublished mixture of Ceci, Millet and flax, with strong nutritional characteristics, the low glycemic index and the natural absence of gluten. At considerable protein and fiber intake it joins the high content of essential micronutrients for good nutrition. It guarantees a balanced intake of vitamins (A, niacin, B6, folic acid, E) and minerals (iron, magnesium, manganese, potassium, calcium, zinc and phosphorus). Noteworthy is also the intake of carbohydrates and easily absorbable amino acids. The flax also gives the mixture “WITHOUT WHEAT” a valuable vegetable source of omega-3 and omega-6, essential fatty acids known for their antioxidant properties and useful for the prevention of cardiovascular system diseases, hypertension and osteoporosis .
