Organic wholegrain spaghetti of Timilia Náttúra are obtained by a process of slow drying and low-temperature to safeguard the aroma, color and flavor of Timilia, a prized ancient Sicilian grain. The wholegrain flour which is obtained from the milling of this ancient grain, preserves most of the nutritional properties of the grain. Wholegrain Spaghetti of Timilia Náttúra are high in fiber, manganese, zinc and iron, and have a low gluten Index. The Gluten Index indicates the quality, the strength, the toughness of the gluten and is determined by a mechanical extraction process (centrifugation) under particular conditions, which defines the strength of a flour. The measured value is less than 15 and is typical of the indigenous ancient grains and by far much lower than modern wheat. A first course of valuable property that brings to the table the Italian tradition.
